Induction Gluten Pie Crust

This is for those who need it really low carb. Not glamorous but it works, haha. It sort of has the feel of a graham cracker crust.


INDUCTION PIE CRUST (GLUTEN)

1 cup Vital wheat gluten (3 carbs per serving)
1/3 tsp salt
6 TBSP cold butter cut into 1/2 inch cubes
1 1/2 TBSP cold water

In a blender or food processor, pulse all ingredients together to form coarse crumbs. You may need to stop and shake it up if your blender gums up easily. Then dump all of this out onto a greased pie plate and press onto bottom & sides for shape. Try not to rub it around.

If it doesn't chop well, just mix it up by hand (fluffing, not mashing) and dump it into the sprayed pan.

Use unbaked crust in your favorite recipe for a baked pie. When using with quiche, I like to add seasonings like basil & garlic to the crust.
