Oatmeal Cake



This is a very versatile recipe which can be a dessert, snack, or breakfast.  It is very filling and can be eaten plain or in a bowl with milk.  Great warm or cold ...good road food too!  We made this for our trip to Colorado last year. 


OATMEAL CAKE

3 c. Oats
2 tsp baking powder
1/2 cup brown sugar
1/2 cup white sugar or Splenda
1 tsp salt
2 or 3 eggs (we use three)
1 c. milk
2tsp vanilla or other flavoring
1/2 c. melted butter or mashed ripe banana

Preheat oven to 350'

Mix dry ingredients. Add wet ingredients. Pour into an 8x8 pan.
Bake for 30 minutes.

Note: For a 9x13 pan just double the recipe. You can use up to 7 eggs in a double batch depending on how eggy you like it. We like a lot of eggs but if you are low on eggs you can get away with just the two per single batch.

I often add cinnamon to this as well.
