Muffin in a Mug

A high fiber, low carb muffin

Muffin in a Mug (also called a MIM or Muffin in a Minute but I cook this one longer, lol) is a great treat when you are in a hurry, only have a microwave to cook, or need to add more fiber to your diet.   This is a very flexible recipe, having hundreds of variations.  After reading many of them on the Atkins forum, I decided to try some additions.   This is what I ended up with...


PEANUT BUTTER MIM w/CREAM CHEESE FROSTING

1/4 c ground flax  (you can grind your own or buy it already ground)
1/2 tsp. baking powder
1 Tblsp splenda or sweetener of your choice
1 tsp. coconut flour (optional)
1 egg
1 Tblsp sour cream
1 Tblsp natural unsweetened peanut butter (I use fresh ground)
1 Tblsp butter or coconut oil, softened
1 tsp vanilla (optional)
1 Tblsp water
1 ounce cream cheese sweetened to taste (for frosting)


Put all dry ingredients in a large mug; mix thoroughly
Add rest of ingredients (except cream cheese) and whisk really well.
Microwave for 2 minutes.  It might pop up above the mug temporarily.

*NOTE: The end result should be moist but not wet.  You may have to do 30 seconds more or less depending on your microwave.  If the muffin starts going back down in the mug it is probably done.

MUG WILL BE HOT!  

Use a knife around the muffin to loosen it.  Dump muffin onto a plate then slice into 4 or 5 pieces. 
 
Add cream cheese to the mug and microwave for about 30 seconds with your preferred sweetener to soften.  Mix like crazy.

Top the muffin slices with the softened cheese.

About 6 carbs for this particular variation..can be even lower if you go with a savory version like garlic though the peanut butter seems to make a more cake-like and higher muffin. 

VERY filling! Since this has a large amount of fiber you need to drink a lot of water in your day if you are not used to that much fiber.

*To keep this low carb make sure to use alternative sweetener such as splenda, stevia, or erythritol.
*You can make this ahead of time and store in the fridge.
*Have fun coming up with your own variations.  You could try cocoa powder, pumpkin, ginger, savory etc. but may have to reduce the water if you add wet ingredients.
