Cheese 'Crackers'

Half a carb per 4 crackers


 
Cheddar cheese
A couple plate-sized pieces of parchment paper (which you can store and reuse over and over and over again)
 
 
Slice some cheese off a block.  You want it about the thickness of a Kraft cheese slice.
Break/cut into 1 inch squares/tiles (I get 4 crackers from one big square cheese slice).
Place evenly spaced onto parchment paper.  Microwave for about 45 seconds. 
Take out and set aside.  Repeat with other parchment paper.
 
After the second parchment comes out the first one should be cooled enough to peel the 'crackers' off and set aside on a plate.  Just keep switching and repeating until you have the number of crackers you want.  When cool, they should be crispy and not bendy.  If they are bendy then you just need to use a bit longer cooking time..by a few seconds.
 
 
These are great for low carb dip or salsa.  You could even crush them up on a salad.  Make up a bunch and put in the fridge, in a baggie.
 
There is an oven version if you want to make a whole cookie sheet at once and not use a microwave but this way works and goes pretty fast.  You can even fry cheese in a frying pan though it takes practice and patience.
 
Other cheeses can be used but because fat content varies you would need to see what works.  Just cook until lacey looking.
